The dough will be sticky and difficult to knead smoothly if it is hot. You can put the dough in the refrigerator and refrigerate it until it is completely cool. Then knead it and it will be very smooth.

2. Roll the dough into long strips and cut into pieces slightly larger than the dumpling pieces.

Here is a time-saving tip: first roll out all the dough and place it on the lid where we usually put dumplings. Then apply oil on one half of it and roll the two together into a pancake. Roll out one and open the lid of the steamer to put the other one inside. The time between the two pancakes is just the right time to put them into the pot.

7. Put the steamed pancakes on a plate, and then tear them apart in the middle with your hands to make two thinner pancakes. Because they are hot, they are still soft even when they are cold.
