Which foods are easily contaminated by aflatoxin? Aflatoxin is widely present in nature, and its content is highest in moldy seed foods. For example, corn and peanuts. Corn has a large exposed part and is easily contaminated by aflatoxin when the moisture content is greater than 15%-30% and the temperature is higher than 25℃. Peanuts, especially cracked peanuts, are also easily infected by aflatoxin. The peanut oil extracted from such peanuts contains a high level of aflatoxin.

Aflatoxin is only decomposed at a high temperature of 280°C. Therefore, general food cooking cannot destroy aflatoxin and eliminate its toxicity.

Aflatoxin in rice is mainly found in rice bran. When cooking, wash the rice thoroughly. Cooked food that has become moldy should never be eaten. Dried food such as mushrooms should be washed clean with water after becoming moldy, and then stored in a dry place. Foods such as bacon and sausages that have mold spots should be washed with warm water, dried, stored, or eaten.

Hepatitis B (HBV) and hepatitis C (HCV) are the most important. Data show that more than 40% of liver cancer patients have a history of chronic hepatitis, and most of them are positive for Australia antibody (HbsAg), so hepatitis B virus and hepatitis C virus are considered to be important causes of liver cancer.

3. Chemical carcinogens: What are the causes of liver cancer? Chemical substances that can cause liver cancer are mainly N-nitroso compounds, such as nitrosamines and nitrosamides. In addition, pesticides, alcohol, safrole, etc. can also induce liver cancer.

4. Water source pollution: Drinking water is seriously polluted, especially ditch water, followed by river water, and well water is the lowest. In villages without tap water facilities, drinking well water should be encouraged.

5. Gene mutation: In recent years, some people believe that environmental mutagens and viruses stimulate the activation of liver cell division response pathways, causing cell point mutations and gene translocations, which are possible factors that accelerate cancer cell proliferation. Therefore, this is also one of the causes of liver cancer.
