2. Braised soy sauce can be replaced by dark soy sauce, but aged vinegar cannot be replaced by balsamic vinegar.

3. When frying potatoes, it is best to use one spoonful more oil than usual for cooking. More oil will prevent the potatoes from falling apart easily.

4. After preparing the braised sauce, it is best to taste it. Pour it into the potatoes only after the taste is ideal. Try not to add any seasonings in the middle.
