How to store sweet potatoes for a year

1. Storing sweet potatoes in well cellars

Choose a place with high terrain, solid soil and low groundwater level, and dig a well shaft downwards, which is generally about 1 meter in diameter and 5 to 6 meters deep. The size of the storage room can be determined according to the storage capacity. The storage room should be covered with 10 to 15 cm thick dry sand, on which the sweet potatoes should be placed. The sweet potatoes can only be filled to 70% full to leave room for ventilation, otherwise they will rot due to moisture and heat.

2. Storing sweet potatoes in cellars

Generally, the cellar is about 2 meters wide, 3 to 4 meters long and 2 meters deep. Stack the sweet potatoes piece by piece from the bottom to the top, and avoid direct contact between the sweet potatoes and the cellar wall.

The structure of the cellar is similar to that of an ordinary house, but the walls and roof are very thick, it is sealed on all sides, has open windows, and has a fire channel for heating, which can be used for high-temperature healing treatment. There are two types of cellars: large cellars (for storing 10,000 to 50,000 kilograms) and small cellars. The hut cellar is small, saving labor and materials, and is suitable for storage by farmers. Generally, each cellar can store 1,500 to 3,000 kilograms.

4. Storing sweet potatoes indoors

Sweet potatoes are afraid of cold. When the temperature is too low, they will be frozen and form a hard core, which cannot be cooked through by steaming or boiling. If the temperature is too high, they will sprout. It is best to keep the room temperature at around 15℃. Sweet potatoes are easily attacked by bacteria and rot when they are exposed to moisture. It is best to store them in breathable wooden boxes. If there are no wooden boxes, wooden boards should be placed where the sweet potatoes are stacked and against the wall, and the pile of potatoes should be covered with something to prevent moisture. During warm days, open windows appropriately to ventilate the room to keep the air fresh and prevent cold wind from blowing in. It is best to put the sweet potatoes bought from the market in the sun for a few hours to reduce moisture in the wound and promote healing. When taking them, be careful to handle them and avoid bruises.

5. Preserve sweet potatoes by slicing and drying

Slice the sweet potatoes and place them on the roof or in a sunny, dry, ventilated place to dry. Be careful not to get caught in rain or snow. After drying, store it in a dry place indoors and soak it in water before eating.
