​Appetizing home-cooked dishes

1. [Stir-fried eggplant with green pepper]

Ingredients: 1 tender eggplant, 1 green pepper, 1 teaspoon chicken stock, 1 1/2 spoon salt, 4 tablespoons olive oil, a little sesame oil;

1. Cut the eggplant into McDonald's French fries, about 5 cm long, and cut the green pepper into strips of similar size to the eggplant;

2. After the oil is heated, pour in the eggplant strips and green peppers and stir-fry quickly. When the eggplant is soft, add chicken stock and salt to taste;

3. Continue to stir-fry until the eggplant is completely soft, drizzle with a little sesame oil, and serve!

2. [Fish-flavored eggplant strips]

Ingredients: 300g eggplant, 10g pickled pepper, 12g garlic, 12g ginger, 12g pickled pepper, 2 eggs, 80g sweet potato starch/tapioca starch, some pork, some green onions;

1. Prepare the ingredients for the fish-flavored eggplant strips: about 300g eggplant, 10g pickled pepper, about 12g garlic, ginger and pickled pepper, two eggs, 80g sweet potato starch/tapioca starch, some pork, and some green onions;

2. Peel the eggplant and cut it into large strips. Add 80g of starch and a small spoonful of salt to 2 eggs to make egg liquid. Heat the oil until it is 50% hot, keep it on medium heat, fry the eggplants wrapped in egg liquid until they are set, then remove them from the pan;

3. Fried eggplant strips. Then raise the oil temperature to 60% to 70% hot, add the eggplant strips and fry them again. This step is to force out excess oil and increase crispness and color. Chop ginger, garlic, pickled pepper, and mince pork;

4. Prepare the sauce: 18g sugar, 18g vinegar, 5g salt, 7g light soy sauce, 3g dark soy sauce, 150g fresh soup, and appropriate amount of water starch. Add some oil to the pan, add the minced meat mixed with a little cooking wine in advance and stir-fry. This method can help the minced meat to become loose.

5. After the vegetables are cooked, peel them apart and sauté the chopped ginger, garlic and pickled pepper in oil until the oil turns shiny. Mix the meat and other ingredients together and pour in the sauce. Stir the sauce until the starch is completely gelatinized, add the fried eggplant strips into the pan, stir slightly, sprinkle with chopped green onions and serve;
