What are the methods for food allergen screening?

I don’t know if you have ever heard of food allergen reactions. In fact, this is a kind of food allergy, which is what we call food allergy problems. If you want to understand it effectively, the best way is to find out through some of its clinical symptoms. For example, severe people will experience laryngeal edema, asthma, or loss of appetite, rash, joint pain, diarrhea and so on.

1. Clinical manifestations :

1. Gastrointestinal symptoms: itching, burning or tingling, swelling of the oral mucosa, swelling of the tongue and soft palate, itching in the throat, and foreign body sensation. Nausea, vomiting, abdominal pain, bloating, diarrhea, and mucous or watery stools.

2. Skin symptoms: skin congestion, itching, wheals, and angioedema. The most vulnerable areas are the face, neck, and ears. Chronic eczema or worsening of existing eczema symptoms. Individual patients: allergic purpura.

3. Anaphylactic shock: It often affects multiple target organs, first manifesting as skin and mucous membrane symptoms, followed by respiratory and cardiovascular system symptoms. It can also affect the gastrointestinal tract, urinary and reproductive, and nervous systems, and in severe cases can lead to death.

2. Eating + exercise induced;

It is more likely to occur if you exercise within 1-2 hours of eating, but less likely to occur if you exercise after 3 hours. Respiratory tract involvement is the most common cause of death from food allergies, and the cardiovascular system is second. Generally speaking, the earlier symptoms appear, the more severe they are, but one should also be alert to biphasic reactions: early symptoms may disappear and then reappear 4-8 hours later. It is recommended that the patient be kept under observation for at least 24 hours.

3. Common food allergens:

1. Protein-rich foods: eggs, milk

2. Seafood: fish, shrimp, crab, shellfish

3. Meat: livestock and poultry

4. Oil crops: soybeans, peanuts, sesame, sunflower seeds

5. Nuts: cashews, pistachios, hazelnuts, almonds

6. Fruits: peach, apple, pear, kumquat, lychee

7. Vegetables: lentils, celery.
