Southern tofu is also known as gypsum tofu (called warm tofu in the Northeast). The molding agent used is gypsum liquid. Compared with northern tofu, its texture is softer and more delicate. However, this is not the gypsum used in hospitals, so don't make a mistake.

The main component of gypsum powder is calcium sulfate. In the process of making tofu, its role is to coagulate the soy protein in soy milk, thus making tofu. Tofu actually contains very little gypsum, as most of it is lost with the water. Gypsum is harmless to the human body and is also a traditional Chinese medicine in traditional Chinese medicine. Gypsum is used to make tofu, and it must be edible gypsum, whose standard name in China is food additive calcium sulfate. To make tofu, you need to use edible grade gypsum, which is 15 grams (the amount of 500 grams of soybeans) of cooked gypsum powder (made by heating raw gypsum to 160 degrees). Put it in a bowl and add an equal amount of water to make it into a paste. Grind carefully by hand or with tools, crush and dissolve, then add a small amount of water to dilute. Wait for a while and the coarser particles of gypsum will settle down. Take out the suspension and set aside. The soy milk should be boiled. Pour the coagulant into the container, stir it thoroughly, and then immediately pour the cooked pulp into it, which is called the counterpoint. Seal immediately after dotting. After swelling for about 10 minutes, the soybean protein will solidify and delicious and nutritious tofu pudding will be produced.

As you all know, the gypsum in tofu is edible gypsum and is harmless to the body. I also satisfied my curiosity by searching on the Internet.
