In Southeast Asia, people infected with liver flukes due to eating raw fish suffer from bile duct infection, bile stasis, peribiliary fibrosis and bile duct hyperplasia, resulting in a high incidence of bile duct cancer. In areas where people are used to eating foods rich in nitrite, the possibility of inducing cancer is even greater.
