Refrigerators inhibit nitrite conversion

When you put newly bought vegetables in the refrigerator, the refrigerator has silently prevented the nitrates in the vegetables from converting into nitrites.

As we all know, nitrite is the "number one killer" of gastric cancer. Most of the nitrate ingested by the human body comes from vegetables (about 80%). If nitrate is exposed to the air, it can be reduced to nitrite by bacteria.

Nitrite can cause blood poisoning, resulting in symptoms of dizziness and hypoxia. At the same time, nitrite can react with secondary amines in other foods, medicines, and residual pesticides ingested by the human body to form strong carcinogens - nitrosamines in the stomach cavity, which is the culprit of digestive system cancer.

In the low temperature environment of the refrigerator, especially below 2°C, the conversion of nitrate to nitrite is almost completely inhibited, thereby reducing people's nitrite intake.

Refrigerators change unhealthy eating habits

Of course, the role of the refrigerator is far more than just inhibiting the conversion of smoke nitrates. Think about your experience of eating bacon, smoked meat, and pickled vegetables. We all ate like this in the early years. Because food was inconvenient to store, we pickled and smoked the meat, pickled and dried the vegetables, or occasionally bought some meat or seasonal vegetables. Now that refrigerators are popular, the storage of vegetables, meat, etc. is no longer a problem, and the practice of pickling pickles, bacon, etc. has gradually decreased.
