Second, place the fish in the sink and scrape off the scales. Generally, you can use a blade or fingernails to peel off the scales layer by layer, and then rinse it with clean water.

Third, hold up the fish gill cover with your left hand and dig out the gills. Remember to dig them out cleanly without leaving any trace of red gills, then rinse them off with water.

Fourth, continue to hold the fish on the chopping board with your left hand, and use a knife or scissors in your right hand to scrape open the fish belly, starting from the cloaca and going all the way to under the gill cover. It is best to cut in a straight line until the whole fish can be broken apart.

Fifth, dig out the fish's internal organs, paying attention to digging out the fish heart and esophagus above the diaphragm near the fish head. This way the whole fish is meat.

Sixth, use clean water to clean the dirt on the fish's body surface and in its abdominal cavity. The black membrane in the fish's belly should also be carefully cleaned. Wash and place on a plate.
