The difference between blue crab and crab

The difference between blue crab and crab

Blue crab is the name of a type of crab, and roe crab generally refers to female blue crab, because the roe contained in female blue crab is very full. In fact, everyone knows a few ways to cook blue crabs. If you want a lighter taste, you can steam it directly, so that you can taste the sweetness of the blue crab. If you want it to be more fragrant, you can stir-fry it.

Blue crab is the name of a type of crab.

Female crabs will have roe when the breeding season is approaching, while male crabs will have roe.

Female crabs with roe are called roe crabs. Therefore, when selling crab roe, you must first identify the female crab, as male crabs do not have roe.

It is relatively easy to distinguish male crabs and female crabs. Just look at the abdomen. If the male crab has a narrow and pointed navel, it is called a pointed navel; if the female crab has a wide and round navel, it is called a round navel.

Nutritional value of blue crab

1. Enhance immune function

Blue crabs are rich in protein and trace elements, and have a good nourishing effect on the body. Each component of the mud crab is rich in protein, among which the female gonad content is as high as 30.98%, which ranks first among fresh products. In addition, the protein amino acids of the mud crab are complete, and the essential amino acid score is 84.23-93.58. Protein can promote human growth and development, maintain the body's nitrogen balance, and enhance immune function.

2. High nutritional value

Scylla serrata is rich in inorganic elements, especially Se and Ca, and is a seafood with high nutritional value and health functions.

3. Promote brain development, enhance the brain's learning and memory abilities, and prevent brain aging.

The body of mud crab is rich in fat and unsaturated fatty acids (UFA). The UFA in muscle reaches 74.58%, which is higher than the 65.61% in the muscle of swimming crab and 74.3% in mantis shrimp head. The polyunsaturated fatty acids (PUFA) are as high as 47.83%, which is nearly 10% higher than the 38.43% in swimming crab and slightly lower than the 51.5% in mantis shrimp head. EPA is as high as 18.04% and DHA is 13.52%, which are comparable to 15.21%, 17.69% in swimming crab, 15.75%, 13.96% in mantis shrimp head and commercially available deep-sea fish oil products. The UFA content of female gonads is as high as 70.30%, that of male gonads is 62.48%, and the lowest UFA content of liver is 58.32%, all of which are higher than that of swimming crab. The content of unsaturated fats in mud crabs is high, especially the ω-3 fatty acids EPA and DHA, which cannot be synthesized in the human body. EPA can significantly reduce the levels of triglycerides (TG) and cholesterol (TC) in serum, inhibit platelet aggregation and delay thrombosis, prevent and treat cardiovascular and cerebrovascular diseases and prostate hyperplasia, and DHA can promote brain development, enhance the brain's learning and memory abilities, and prevent brain aging.

4. Nourishing, anti-aging, and anti-cancer

Scylla serrata is a high-K and low-Na food. Therefore, it is more suitable for patients with hypertension. The Ca content in its liver is extremely high, second only to stone snails, dace, dried shrimp, dried shrimp and anchovies, and the natural organic calcium is easily digested and absorbed by the human body. The content of other essential elements such as Mg, Fe, Cu, Zn, and Mn in Scylla serrata is also high. The selenium content of each component of the crab is very high, especially the female gonads. Selenium is a component of glutathione peroxidase in the human body and is involved in the synthesis of coenzyme A and coenzyme Q. It has the functions of protecting the structure and function of cell membranes, anti-oxidation, eliminating free radicals, antagonizing and reducing the toxicity of certain poisons, and stimulating the production of immunoglobulins and antibodies. The human body's liver, pancreas, and kidneys contain relatively high levels of selenium, while cancer patients have reduced levels of selenium in their serum and hair. Therefore, mud crabs, especially the mud crab paste, have nourishing, anti-aging, and anti-cancer effects.
