The people of Putian call it "kang", such as kang spare ribs, kang carrots (pork feet), kang mutton, and "casserole kang (a nourishing soup cooked in a casserole)" eaten by women in confinement.

2. Stewing in a cage, which is called "steaming" in Putian. Just put the covered small container containing the raw materials into the steamer and steam it. This method is rarely used in home cooking.

3. Stewing in water, called [k'au13] (similar to the Mandarin word "roast") in Putian, put the raw materials into a ceramic container, cover it, then put the container into a pot of water (the water level is below the mouth of the container), cover the pot, heat it over low heat for a long time, and stew the raw materials.
