First, how to process loach? Loach is easy to raise, so if you buy a lot at one time, you can keep them at home and they will stay fresh for a week. This method is better than processing them and freezing or refrigerating them in the refrigerator. In local dialect, loach eats mud, so you must remove the mud in your stomach thoroughly to avoid a sticky feeling in your mouth.

Second, because loaches are slippery and difficult to catch, you have to let them "look up at the sky" first. Put half of the water, add salt, put on a plastic bag, and wait for 3-5 hours. This method can make the loaches spit out the mud in their stomachs, and also make the loaches that have been hit die faster. Otherwise, we have no way to catch them and how to deal with them.

Third, after all the loaches have died, if there are some that are still alive, you can flood them with boiling water. Remember, cover the pot and it is best to put something on it, because when the water boils, the loaches will jump back and forth and may even burst the lid. After there is no movement, open the lid and there will be a foul smell and a bunch of white foam, which is basically the loach mucus.

Fourth, put on gloves , take out the loach, and place it in cold water to wash. Be careful not to cook it for too long. Rubbing it in cold water after it is cooked will easily separate the meat. When it is almost washed, use scissors to start processing the internal organs. The internal organs of the loach are very dirty, bitter, and smelly, so they must be cleaned. Use scissors to cut off the head, cut along the neck to the tail, and then take out the internal organs with your hands. Loaches are small, so this step is still very troublesome.

How to deal with loach? After processing the internal organs, wash away the blood with clean water, and the clean loach is ready. Both braised and stewed loaches are delicious and rich in trace elements. The soup is suitable for pregnant and lactating women, while the braised version is especially suitable for men to eat with wine. You can cook one loach in two ways, and you can eat one more at a time.
