How to open a new iron pot

For those who don’t have much knowledge of kitchen, they don’t have a very clear idea of ​​how to handle iron pans, especially for newly bought iron pans. They don’t know that they need to be handled before they can be used for cooking. Because the newly bought iron pan can increase its service life after it is used, it can also reduce the number of times the iron pan rusts. However, there are certain precautions when opening the pot. So how should you open a newly bought iron pot?

In life, many friends just wash the newly bought pot with water and then use it. Some friends vaguely know that the new pot needs to be processed before use, but they don’t know how to deal with it.

Because a new iron pan will have a lot of impurities remaining on the surface when it is made, and in order to prevent it from rusting due to contact with air before use, the iron pan is usually sprayed with a thin protective layer (anti-rust oil, also known as pan oil) when it leaves the factory. These should be removed before cooking. This process is what we commonly call opening the pot or refining the pot. At the same time, opening the pot is also an important step in the use and maintenance of iron pots. Here I will introduce a relatively simple method to you.

Seven steps to open and maintain a new iron pot:

1. Prepare a piece of raw fat pork (the kind that is fat, so that it can produce a lot of oil when fried);

2. Wash the pot with hot water and detergent (the first step is to wash off the oil in the pot); wipe off the water (especially the bottom of the pot), place the pot on the stove and dry it over medium or low heat;

3. Put the raw fat pork into the pot, hold down the raw fat pork with kitchen tongs (chopsticks), and use it as "soap" (rub it back and forth), and wipe it continuously in a spiral shape on the inner wall of the pot from the inner circle to the outer circle, so that the overflowed grease is evenly spread over the entire surface of the pot.

4. As you keep wiping, more and more melted black lard will overflow from the pot (new pots will turn black when they are used, only iron pots will do this), and the soap (fat pork) will also turn black and smaller;

5. Move the whole pot away from the stove, pour out the black lard (it is recommended to pour it directly into the bathroom), wipe the oil clean with kitchen paper, clean the pot with hot water (use a steel wool brush when washing the pot, if it is a non-stick pan, use a soft brush because the steel wool will brush off the coating), wipe it dry, put the pot on the stove and repeat steps 2, 3, and 4;

6. When the surface of the raw fat pork is burnt and hardened, you can use a knife to remove the surface layer and continue to wipe the pot; each time you wipe, the pot surface will appear cleaner than before. Repeat this operation until the raw fat pork no longer turns black; (repeat about 3-4 times)
