This "newcomer" in the yogurt world actually has a long history: many years ago, herders on the prairie boiled pure milk on a fire. After a long time, they found that the milk turned brown. Although the color changed, the taste was not compromised. In fact, after the water evaporated, the milk flavor became more intense. This brown milk is the predecessor of charcoal-roasted yogurt.

This color change is actually caused by a chemical change called the "Maillard reaction". The sugar and protein in the milk produce brown substances under high temperature conditions. Golden toast and grilled meat are also the result of this reaction.

Charcoal-roasted yogurt is boiled at low temperature before fermentation and then fermented at low temperature. It looks like a soft brown color like chocolate, so it is also called burnt yogurt, baked yogurt, cooked yogurt, brown yogurt, etc.

The main difference between charcoal-roasted yogurt and ordinary yogurt lies in the processing technology. Charcoal-roasted yogurt is made through a long period of low-temperature fermentation, and its taste is more delicate than ordinary yogurt. Because the process is more complicated and the cost is high, charcoal-roasted yogurt is reasonably expensive.

Expensive ≠ More Nutritious

The yogurt is so exquisitely made and sold at such a high price, so it must be more nutritious, right?

Judging from the ingredient list and nutritional composition table, there is no difference between charcoal-grilled yogurt and ordinary yogurt. They are both a combination of milk and beneficial bacteria, and there are no additional magical substances. The former does not have any nutritional advantages.

However, the nutrition of charcoal-grilled yogurt is no worse than that of ordinary yogurt. Ordinary yogurt is rich in protein, calcium, and probiotics, and charcoal-grilled yogurt has all of them.

After a long period of heating, some heat-inlaboratory water-soluble vitamins will indeed be lost in the milk, but the content of these vitamins in the milk is not high to begin with, so if they are lost, they are lost, and you can make up for them by eating a few more bites of vegetables.

Therefore, if you want a unique taste and texture, you can choose charcoal-roasted yogurt; but if you want more nutrition, then take this cheap and solid ordinary yogurt!
