When there is almost no white core, turn off the heat and simmer for a while. Make sure the tapioca pearls are just cooked through. If the white spots are not fully cooked until transparent, they will be undercooked and have hard lumps when eaten. If you cook it for too long, it will be too soft and not chewy. 3. Cook for about 8 minutes, turn off the heat, cover and simmer for 10 minutes.

4. Separate the tapioca pearls from the water in the pot, put the tapioca pearls in a container, add cold boiled water, and put it in the refrigerator for a few hours.

5. When eating, add appropriate amount of ice milk (or ice coconut juice) and cotton sugar, mix well and it is ready to eat.

Coconut Milk Sago

70g tapioca pearls, 500ml coconut juice, some water

1. Pour appropriate amount of water into the pot and bring to a boil over high heat.

2. Add tapioca pearls and continue cooking for 10 minutes, stirring in the middle to prevent it from sticking to the bottom of the pot.

3. Cook the tapioca pearls until they are 70% cooked (only a small white dot is left in the middle)

4. Turn off the heat, cover with lid and simmer for 10 minutes.

5. The tapioca pearls are fully cooked and transparent. Rinse off the colloid on the surface with cold water, and then rinse again with cold boiled water (this step is to remove the raw water)

6. After putting it into the glass bottle, directly add cold coconut juice. Each person in the family can have a cup. It has a full taste, sweet flavor and is refreshing.
