The difference between white sugar and granulated sugar

The granulated sugar and caster sugar supplied on the market are both sucrose sugars, but granulated sugar is sweeter. During the production process, caster sugar is sprayed with about 2.5x invert sugar syrup, while granulated sugar is not. Therefore, caster sugar is sweeter than granulated sugar. Secondly, caster sugar has smaller particles and contains more water, so it is easy to dissolve in the mouth. The sugar concentration is higher on the taste buds per unit area of the tongue, so it feels sweeter when tasting. However, granulated sugar has larger particles and contains less water, so it dissolves slower in the mouth and does not immediately reflect its high sweetness (invert sugar) like caster sugar. In terms of physical and chemical indicators, the sucrose content of white sugar is higher than that of granulated sugar.
