The growth of fish is greatly affected by the geographical environment in which they live. For example, there are many Spanish mackerel in Shandong Peninsula, and there are many crispy-meat Wan fish in Zhongshan in Guangdong. People in the northern region have seldom heard of this kind of fish, which is unique to the Guangzhou area. It has delicious meat and is difficult to breed. Sold far and wide at home and abroad.

Zhongshan crispy grass carp, a geographical indication product of Zhongshan City, Guangdong Province. Due to the unique breeding environment and technology, the crispy grass carp has firm, refreshing and crispy meat, can be cooked without becoming mushy, and has a fragrant and delicious flavor. It has won numerous honors and is exported to Hong Kong, Macao and some South American countries.

The breeding of Zhongshan crispy grass carp undergoes a special process . The first step is to raise fish fry. It takes about a year to grow them into small fish weighing about half a kilogram, and another year to grow them into 5 to 7 kilograms. At this point, there is no difference between it and ordinary grass carp. But in the third year, if fed with broad beans at temperatures above 25°C, the meat of the grass carp will gradually become crispy. After being fed with broad beans for more than 120 days, the fish becomes truly crispy-fleshed. Most crispy-fleshed grass carp farmers buy grass carps that have been farmed for two years to cultivate crispy-fleshed grass carp.

Zhongshan has a long history of developing crispy grass carp farming. As early as 1973, people in Zhongshan used cement pools and recirculating water breeding methods in the Yangtze River Reservoir to successfully breed a kind of grass carp with firm and crisp meat, which can be boiled without becoming mushy, and has a fragrant and delicious flavor. It was later called crispy meat grass carp. In the early 1980s, Dongsheng Town was the first in Zhongshan to experiment with breeding crispy grass carp in ponds. After more than 20 years of exploration, practice and accumulation, it mastered a set of mature breeding techniques, and the yield per mu increased from 750 kg to 1,710 kg. In March 2006, the "Dongsheng Town Crisp Grass Carp High-Yield and Efficiency Improvement Technology Demonstration" project was appraised by an authoritative agency in Guangdong Province, and the overall project reached the leading level among its peers in China.

In accordance with the Regulations on the Protection of Geographical Indication Products, the General Administration of Quality Supervision, Inspection and Quarantine organized a review of the application for geographical indication product protection for Zhongshan crispy grass carp. After passing the review, it was approved to implement geographical indication product protection for Zhongshan crispy grass carp from December 10, 2008.

The protection scope of the geographical indication product of Zhongshan Crisp Grass Carp is based on the scope proposed in the "Letter on Delimiting the Origin of Zhongshan Crisp Grass Carp" (Zhongfu Letter [2007] No. 161) issued by the People's Government of Zhongshan City, Guangdong Province, which is the administrative area under the jurisdiction of Zhongshan City, Guangdong Province.

Producers within the protection scope of the Zhongshan Crispy Grass Carp geographical indication product may apply to the Zhongshan Municipal Quality and Technical Supervision Bureau of Guangdong Province for the use of the "Geographical Indication Product Special Mark", which will be approved by announcement by the General Administration of Quality Supervision, Inspection and Quarantine.

Quality technical requirements

(a) Varieties

(2) Aquaculture water requirements.

All water used is from the Xijiang River within the protected area, with the salinity maintained at 0.3‰ to 0.4‰ all year round. The water temperature is above 25°C for more than 200 days each year.

(3) Breeding technology.

1. Fish species requirements: Large-sized fish species cultivated locally, with a stocking size of ≥ 2.0 kg/fish.

2. Stocking density: Stocking density <300 fish/667㎡ (mu).

3. Feed usage and requirements: Mainly feed complete feed and high-quality broad beans, with the daily feed amount being 3% to 5% of the fish body weight. Combine with appropriate amount of green fodder such as elephant grass. The ratio of concentrated fodder to green fodder is 7:3.

4. Daily management:

Keep the water depth of the fish pond at 2.5 meters; the water transparency of the fish pond should be 25cm to 30cm. Change the water appropriately depending on the water quality.

5. Fishing: Listing size ≥5.5kg/tail.

6. Environmental and safety requirements: The breeding environment, epidemic prevention and control must comply with relevant national regulations and must not pollute the environment.

(IV) Quality characteristics.

1. Sensory characteristics: The spine is relatively stiff, the meat is dense, crisp, soft and tough, and the meat shreds are not easy to break.

2. Physical and chemical characteristics: Cut the fish into 2mm to 3mm thin slices and cook in boiling water for more than 30 minutes without breaking; the moisture content of fish back muscle is ≤79.00%, fat ≥1.63%, calcium ≥0.47mg/g, and glutamate ≥0.47mg/g.

3. Safety requirements: Product safety indicators must meet the relevant national regulations for similar products.
