What can you do with leftover dough

The quantity of pasta is not as easy to control as other types of food, because the amount of fermented pasta and the amount used in the production are not so easy to estimate. Therefore, many people will have some dough left over when making pasta. It would be a pity to throw away the remaining dough at this time, so it is better to use it to make something else. So what can be done with the leftover dough? Now let’s talk about what to do with leftover dough.

What I’m sharing today is a salt and pepper roll, but since no one was taking photos while I was making it, I didn’t capture the process. When making this twisted flower roll, the width of the rolled dough should not be too large, it should be small and cute, and the shape should be beautiful. Otherwise, it is easy to collapse or deform during the proofing or steaming process.

Tools/Raw Materials

Ingredients: Dough: flour, baking powder, warm water and oil Filling: pepper powder, salt, oil

Methods/Steps

1/15

Add oil, salt and pepper powder to make the filling.

2/15

Knead the dough until smooth. (If you are making it fresh, dissolve the baking powder in warm water, add flour and dough, and let it ferment until it doubles in size)

3/15

Pinch the dough in all directions and roll it into a rectangular pancake. The thickness of the pancake determines the best layers, so a very thin one is best.

4/15

Brush the prepared salt and pepper oil evenly on the pancake.

5/15

Roll it up. (It is best not to roll it too wide, about 5 cm is enough, it will get wider as the roll gets bigger)

6/15

Cut into pieces about 5 cm wide.

7/15

Stack the two pieces together, with the exposed side facing inwards.

8/15

Press from the middle with both hands and fold it in half.

9/15

Place all cut sides facing up.

10/15

Pull up one end with your left hand and roll it up.

11/15

Press the tail on the table to shape it.

12/15

Everything is done and let it rise for about half an hour.

13/15

Put water in the steamer, brush the grate with oil, and put the steamed buns in.

14/15

Bring to a boil, steam for 15 minutes after the steam comes out, turn off the heat, and simmer for 5 minutes.

15/15

Take out and let it cool. If you can’t finish it, wrap it in a plastic bag and store it in the refrigerator.

Leftover dough can be stored in the refrigerator for several months, but it is best not to put it in the freezer.
