Methods for reducing alcohol content in liquor

The alcohol content of liquor is generally quite high, basically above 30 degrees. The higher the alcohol content of liquor, the easier it is for people to get drunk, so some liquors with too high an alcohol content need to be reduced. There are many ways to reduce the alcohol content of liquor, such as blending it with lower-alcohol liquor or distilling it. However, the damage to the liquor itself is very great after the alcohol content is reduced. So what are the methods to reduce the alcohol content of liquor?

Treatment methods for liquor after alcohol reduction:

1. Liquor tends to lose its gloss after its alcohol content is reduced. The solution to this problem is adsorption and filtration.

a. The adsorption methods are activated carbon adsorption and medium tank adsorption.

b. The filtering method is diatomaceous earth filtration and PE sheet filtration.

2. The taste of liquor is not good after the alcohol content is reduced. It is analyzed by gas chromatography and physical and chemical tests, and then blended according to the characteristics of the liquor.

It should be divided into: synthetic liquor, blended liquor, and liquor distilled by koji enzyme conversion. Synthetic liquor is a synthetic liquid made of alcohol, flavors and water. Blended liquor is a mixed liquid of brewing base liquor, alcohol, essence and water. Qu enzyme conversion distilled liquor is a liquor condensed through fermentation and distillation brewing processes. "Whether it is produced by fermentation and distillation" and "whether chemical flavors are added" are important bases for distinguishing other liquors. Whether it is brewed by "cellar" fermentation is the benchmark for determining cellar liquor.
