How to blanch fried garlic shoots

Stir-fried garlic shoots is actually quite simple and not that complicated. Many people can make it, but they don’t know how to blanch it in water. Although this does not affect the consumption, the taste of the garlic shoots will obviously change. You may even need to add some seasonings to cover up the spicy taste of the garlic shoots themselves. It is best to add some chili peppers, which will make the taste richer.

Stir-fried pork with garlic sprouts

[Ingredients] 250 grams of pork belly, 150 grams of garlic shoots, and 2 peppers. (1) 1 tablespoon wine, 1 tablespoon soy sauce, 1/2 teaspoon sugar; (2) 1/2 teaspoon salt, 4 tablespoons water.

1. Wash the pork belly, cut into thin slices, mix with seasoning (1) and marinate briefly.

2. Heat two tablespoons of oil, add the meat slices and stir-fry over high heat. Remove from the heat when the meat turns white.

3. Remove old stems from garlic shoots, wash and cut into small pieces. Slice the chili pepper, remove the seeds and cut into thick strips. Use two tablespoons of oil to fry the garlic shoots, add seasoning (2) and the chili pepper strips.

4. Pour in the meat slices and stir-fry until the soup is dry and serve.

Important Tips:

1. Pork belly has a mixture of fat and lean meat, and has a better taste. It is not advisable to use too lean meat, otherwise the taste will be dry.

2. When selecting garlic shoots, first remove the rough and hard front part and the tail part; do not cover when frying, otherwise the color will turn yellow.

Sweet and Sour Garlic Sprouts

[Prepare ingredients] 5 kg garlic shoots, 500 g sugar, 750 g vinegar, and a little salt.

⑴ Wash and clean the garlic shoots, cut them into 3 cm long segments, blanch them in boiling water to remove the spicy taste, then remove them and let them cool.

⑵Put the pot on the fire, add vinegar, sugar and a little salt, bring to a boil and let it cool, pour in the garlic shoots, mix well and put into a clean jar. Turn it over once a day for 3 to 10 days and it will be the finished product.

[Ingredients] 3 liang pork fillet, 1 liang garlic sprout, a few slices of ginger and carrot, 2 spoons of XO sauce

1. Marinate the pork tenderloin with appropriate amount of soy sauce, sugar, cornstarch and oil for a while;

2. Blanch the garlic sprouts and carrot slices in oil and salt water, then remove and drain;
