1. To avoid bacterial residue in wine, we must start from the first step. Washing grapes is very important. Generally, there may be pesticide residues on grapes, so we should wash them repeatedly with tap water and remove rotten grapes. Then, when choosing winemaking containers, we should choose ceramic jars or glass bottles, because plastic may react with alcohol to produce some harmful substances that endanger human health. When sealing, do not turn over or open the lid at will to avoid the entry of debris and the production of bacteria.

2. In short, it is impossible to have no bacteria at all, but we should try to avoid the occurrence of bacteria from every step. If we want to get good wine, we must take every brewing step seriously.

1. Fermentation environment temperature control

Do not place the container in an overheated place. The suitable fermentation temperature for red wine is 28℃ to 32℃, and the fermentation temperature for white wine is around 20℃. Generally, the fermentation takes 3 to 7 days, the skins and residues float up and are completely separated from the juice. Then they are filtered with gauze, and the grape juice is sealed for about a week. This is the ideal wine in our minds.

2. Wine should be brewed with original juice

Adding water or wine would be a mistake. Homebrewed wine will produce gas during the fermentation process. Never use plastic bottles, iron, aluminum, copper utensils, etc. to hold it. Use wooden barrels or stainless steel containers, and do not fill them up. Insert a U-shaped tube on the sealing cover to exhaust air, and sulfur dioxide will be discharged along with the fermentation gas.

3. The amount of pulp poured in should not exceed 4/5 of the volume of the fermentation container.

Fermentation tubes need to be installed during the fermentation process. Home-brewed wine will produce carbon dioxide during the fermentation process. If too much fruit pulp is poured in and the fermentation tank is not installed, it is easy to cause the container to burst and cause unnecessary losses.

4. It is best to choose an opaque ceramic jar for brewing wine.

If the jar you are using is a clear glass jar, you should cover the jar with a black plastic bag during the fermentation process. When brewing wine, you must pay attention to prevent air leakage and mold. If you find that the wine at home is moldy, clean it up in time and do not drink it. If you are not proficient in wine making techniques, it is also recommended not to make wine at home.
