Autumn and winter seasonal vegetables

Although the temperature is relatively low in autumn and winter, it is also a season of harvest. There are still many seasonal vegetables. We need to eat more vegetables in our daily life, so that our body's nutrient intake can become more balanced. The most common ones include lettuce, bamboo shoots and cabbage. The chlorophyll and protein contained in these vegetables are needed by the human body.

(1) Root vegetables: Vegetables with thick roots as their product organs belong to this category.

① Fleshy roots - products made from the main roots that grow from the seed radicle, such as radish, carrot, root mustard, rutabaga, turnip, horseradish, parsnip, etc.

② Root tubers - products based on the enlarged lateral roots or nutrient buds, such as burdock, yam bean, sweet potato, kudzu, etc.

(2) Stem vegetables: vegetables whose products are derived from their thick stems.

① Fleshy stems - products with fleshy above-ground stems, including lettuce, wild rice stems, stem mustard, kohlrabi, etc.

② Tender stems - products with sprouting shoots, such as Asparagus cochinchinensis, bamboo shoots, and Chinese toon.

③ Tubers - products with large tubers, such as potatoes, Jerusalem artichokes, grass silkworms, and silver bar vegetables.

④ Rhizomes - products with thick rhizomes, such as lotus root, ginger, and lotus.

⑤ Bulbs - products using underground bulbs, such as arrowhead, taro, water chestnut, etc.

(3) Leafy vegetables: vegetables whose products are fresh leaves and petioles.

① Ordinary leafy vegetables - Chinese cabbage, leaf mustard greens, black cabbage, sedge, kale, shepherd's purse, spinach, amaranth, apricot, leaf beets, lettuce, chrysanthemum, celery, etc.

② Heading leafy vegetables - cabbage, Chinese cabbage, head lettuce, cabbage, etc.

③ Spicy leafy vegetables - onions, leeks, shallots, fennel, coriander, etc.

④ Bulbs - bulbs are formed by swelling at the base of the leaf sheath, such as onions, garlic, shallots, lilies, etc.

(4) Flower products: products with inflorescence or plump and tender branches, such as daylily, artichoke, cauliflower, broccoli, kale, etc.

(5) Fruits and vegetables: products with fruits and seeds.

① Gourds - pumpkin, cucumber, watermelon, melon, winter melon, loofah, bitter melon, snake melon, chayote, etc.

② Berries: tomatoes, peppers, eggplants.

③ Legumes - beans, cowpeas, sword beans, peas, broad beans, edamame, etc.
