5. After blanching, the outer skin of the geoduck siphon can be easily peeled off.

7. Soak the siphon, which is the part of the elephant trunk, in ice water and use a brush to remove the brown skin on the surface.

8. The siphon soaked in ice water is very crisp and tender, and the taste is better. Cut the two air holes exposed at the thick end of the siphon in half along the middle.

9. Cut the geoduck's siphon into thin slices by cutting at an angle.
