Most human diseases are related to enzyme deficiencies or synthesis disorders.

Enzymes help the body digest and absorb food, and maintain all internal organ functions including: cell repair, anti-inflammatory and detoxification, metabolism, enhancing immunity, generating energy, and promoting blood circulation.

Covalent catalysis: A substrate or part of a substrate forms a covalent bond with a catalyst and is then transferred to a second substrate. Many enzyme-catalyzed group transfer reactions occur covalently.

There are a large number of enzymes in the human body with complex structures and a wide variety. So far, more than 5,000 types have been discovered (i.e. diversity). For example, when chewing rice in the mouth, the longer the chewing time, the more obvious the sweetness. This is because the starch in the rice is hydrolyzed into maltose under the action of salivary amylase secreted in the mouth. Therefore, chewing more when eating can allow food to be fully mixed with saliva, which is beneficial for digestion.
