This protein can tightly bind with biotin in the intestine to form a stable and inactive complex, thus hindering the absorption of biotin. If you consume large amounts of raw egg white, you may suffer from biotin deficiency, which manifests as general fatigue, hypersensitivity, dandruff, and loss and scaling of the squamous epithelial cells of the lips. If the egg white is heated, this avidin in it will be destroyed and will no longer have the effect of hindering the absorption of biotin.
