How to store yeast powder

We may add some yeast powder when making pancakes or flour. Yeast powder makes the pancakes we make particularly good in taste and color, but yeast powder is very easy to evaporate. Putting some lime around the yeast powder can also effectively help us ensure that the environment where the yeast powder is stored is dry. Let’s briefly describe how to preserve yeast powder.

1. It must be stored in a refrigerator or cold storage at low temperature. If stored at room temperature, it will easily dissolve and spoil. The effective storage period is only 30 days. Do not buy too much at one time and purchase frequently. Needs activation before use. In spring, autumn and winter, it is generally necessary to use warm water at 30-35℃ to activate it for 10-15 minutes. The fresh yeast can only be added to the flour after it has regained its activity. However, in summer, using a high-speed mixer does not require pre-activation with water.

2. After opening the yeast bag, seal the opening tightly and then refrigerate to preserve its activity.

Factors that affect yeast stability include moisture, nitrogen content, storage temperature, and the presence of oxygen. Yeast cells are in a dormant state under dry, airless and nutrient-free conditions and are easy to preserve. It is best to use it up within a short period of time after opening. If the yeast is not used up after opening the bag, it should be kept in a refrigerated state and avoid heat and moisture. In other words, it should be refrigerated to preserve the activity of the yeast.

Experiments have shown that when yeast is vacuum packaged, the yeast activity decreases by 0.6% per month at 5°C, 1.7% per month at 20°C, and 80% per month at 37°C. Therefore, after opening the yeast bag, be sure to seal the opening tightly and then refrigerate it to preserve the activity of the yeast. But it must be used up as soon as possible, otherwise the yeast will become ineffective.

The above are some scientific methods and suggestions on how to preserve yeast powder. Yeast powder is very easy to volatilize, so try to store it in a relatively closed box. You can add a layer of protective film on the surface of the box to achieve a very good antioxidant effect.
