Yellow potatoes and sweet potatoes are both tuber crops, and the substances they contain are roughly the same, most of which are starch, but the taste of yellow potatoes and sweet potatoes is different. The most common ones in our daily life are generally sweet potatoes. The skin of sweet potatoes is red, while the skin of yellow potatoes is yellow, so this is the main way to distinguish the two. But what are the differences between yellow potatoes and sweet potatoes?

1. The difference between white, red and yellow sweet potatoes

The skin of white-heart sweet potatoes is light yellow, while that of red-heart sweet potatoes is red. The white-heart ones contain more water and less starch, so they are not as sweet as the red-heart ones, and their taste is not as good as the red-heart ones, but they have a higher fiber content. The ones with red flesh can be steamed, roasted, or dried after being steamed. They are very sweet and delicious! Of course, the ones with white flesh can also be used in this way, but they are not as sweet as the ones with red flesh. The white-heart ones are used to extract starch. You know starch, right? Then they are processed into vermicelli white-heart sweet potatoes: they have a relatively high starch content and a floury taste. It is generally used as sweet potato vermicelli, which is the chewy sweet potato vermicelli you eat when eating hot pot.

2. How to store sweet potatoes

It is recommended to place the sweet potatoes directly in a bamboo cage or a plastic basket with holes in a ventilated place. It can be kept at room temperature for about a month in winter, and for about 4 to 10 days in summer when the temperature and humidity are high. The suitable storage temperature for sweet potatoes is 15℃, and the general household refrigerator temperature is about 5℃. Too low a temperature will cause the sweet potatoes to turn black, so they cannot be refrigerated in the refrigerator.

3. Can sweet potatoes be eaten after they sprout?

Sweet potatoes belong to the Convolvulaceae family. Unlike potatoes, which belong to the Solanaceae family, sweet potatoes do not produce toxic solanine when they sprout. Therefore, they can still be eaten after removing the sprouts. However, sprouting will absorb the moisture of the sweet potatoes, and the taste will be slightly reduced. As for the black spots, if they are dark brown in color that are produced by natural healing after a collision, they are edible. However, if the black spot fungus has a foul smell, it will produce sweet potato ketones, so please do not eat it. However, farmers usually pick out the ones with black spot fungus when harvesting, so there is no need to worry too much. The skin of sweet potato is very thin and will be worn off by slight collision or friction during washing. It will heal naturally and turn black over time without affecting the inside.
