2. Put the mutton into the casserole, add water and bring to a boil over high heat, then reduce the heat and add the enoki mushrooms, wolfberries and red dates at once. At this time, you can add an appropriate amount of cold water, continue to boil over high heat, then reduce the heat and simmer for an hour, add salt and chicken essence to season, and finally sprinkle with a handful of celery beads, cover the pot, and turn off the heat immediately. A fragrant enoki mushroom and mutton soup is ready.

Ingredients: 250g spinach, 300g enoki mushrooms, 250g frozen lamb rolls, chopped green onions and shredded ginger as needed

1. Boil them in small amounts multiple times as much as possible to avoid putting too much in at once which will cause the water temperature to drop, prolong the time in the pot and make the meat tough.

3. In another pot, pour in a proper amount of oil, heat it up, add chopped green onion and shredded ginger, stir-fry until fragrant, add light soy sauce and enough water, and bring to a boil.

4. After boiling, add the spinach segments and cook for two minutes, then add salt and pepper.

5. Add the enoki mushrooms and cook for one minute. Finally, pour in the lamb slices, stir well and turn off the heat.

6. Drizzle in a little sesame oil before serving.
