Toona sinensis is preserved until the Chinese New Year

Toona sinensis is a food that many people like. In spring, a large number of people will start to eat Toona sinensis. Of course, this is not only because Toona sinensis tastes good, but also because Toona sinensis has rich nutritional value. 1. Storage method of toon sprouts

Toona sinensis buds have high water content, strong vitality, strong respiration, and are prone to browning after being picked. They are afraid of heat, cold, and dryness, and are prone to rot if the humidity is too high. When the temperature is below -3℃, it will freeze into a dark green translucent state. After thawing, it will become sticky and the aroma will decrease. However, in an environment above 10℃, it will easily deteriorate, fall off leaves, and rot, reducing its edible value. The salting storage method that is currently widely used has solved the problem of long-term supply, but it causes a large loss of flavor and nutrition and does not have the effect of preserving freshness. The preservation and storage methods of Chinese toon are introduced as follows.

2. Short-term fresh-keeping storage method

1. Picking and preservative treatment: For short-term preservation of toon sprouts, you can choose to pick them in the sunny morning when the temperature of the vegetable is low, which is conducive to preservation. Before harvesting, 50×10-6 6-benzylaminopurine (6-BA) can be sprayed on the leaves and the crops can be harvested immediately after the agent dries.

2. Storage: ⑴ Storage in bags. After harvesting, toon is graded according to thickness, length and color, bundled into small bunches of 500 grams (not too tight), put into plastic bags or paper bags, placed in a ventilated and cool place or in the refrigerator, open the bag once a day for ventilation, and it can be kept fresh for 10-20 days. ⑵ Root soaking and storage. Tidy up the bases of the Chinese toon, tie them into small bunches and place them upright in a shallow dish with 3-4 cm of clean water. Soak them for a day and night. Then put them into a basket or box and place them at 0-1℃. They can be kept fresh for a week.

3. Long-term fresh-keeping storage method. Reminder: Experiments have shown that blanching and quick-freezing can preserve toon sprouts for more than a year, and their flavor and quality are basically unchanged when eaten.

The process flow of quick freezing and preservation of toon sprouts: cleaning → blanching → cooling → bagging → quick freezing.

Cleaning: Wash the purple-red tender toon buds, 10-15 cm long, which have not yet become lignified, with clean water to remove dust, dirt, etc. Be careful not to rub when cleaning to avoid tissue damage.

Blanching: Use 0.2% sodium bicarbonate as the blanching liquid, and blanch the toon sprouts in the boiling blanching liquid for 30 seconds.

Cooling: After blanching, immediately place in sodium bisulfite solution to cool. To speed up cooling, multiple containers can be used to hold the coolant for staged cooling.

Bagging: Drain the cooled toon buds, put them into plastic bags at 0.5 kg per bag, arrange the buds neatly head to tail, and fold the bag opening.

Quick freezing: The packaged toon sprouts are immediately placed in a freezer, quick-frozen for 24 hours, and then stored at -18°C. During quick-frozen storage, the flavor quality and color changes of the toon sprouts in the bag should be checked frequently so that they can be sold or processed in time.
