Ingredients: 500g flour, 1 egg, 250+25g water, 4g baking soda, 3g aluminum-free baking powder (do not use sweet baking powder that contains aluminum), 15g salt, 15g oil

Serving size: about 20 pieces

Preparation: Pour medium-gluten flour into a container, you can also use high-gluten flour for better results. Add baking soda, aluminum-free baking powder and salt and mix well. Add an egg, 250 grams of water and appropriate amount of oil, then knead into dough. The dough you knead may be a little dry, don’t worry, add another 25 grams of water in batches to make the dough a little softer, so it will be easier to fry.

After the dough is kneaded, spray some water on the surface and leave it overnight. The time doesn't have to be as long as mine, it can be shorter. I fried it in the morning. So I kneaded the dough the night before.

Production steps:

Step 1: Grease the chopping board and divide the dough into two parts. Take one of the dough pieces and roll it into a rectangular shape. Because there is oil on the chopping board, it won't stick. Cut the dough into small rectangular pieces according to the size of the pan you want to fry in.

Step 2: Stack two dough pieces together and press them down with chopsticks. Use this method to complete the process of making all the dough pieces. Then stretch them one by one. Stretch it for better frying. Of course, the length of the extension depends on the pot.

Step 3: Put a little oil in the pan. When the oil temperature rises, throw a small dough into it. It will slowly float up and you can put the dough for the fried dough sticks in. Slowly fry until golden brown and become larger and puffy, which means it is successful.
