1. The first thing to do is to choose grapes. You must buy naturally ripened grapes in the summer when grapes are on the market in large quantities. Do not buy grapes grown in greenhouses out of season. Buy ripe purple grapes, and use scissors to cut the grapes one by one close to the stem. You can leave a little bit of the stem to avoid damaging the skin. Do not pull the grapes with your hands, as this may damage the skin. Then rinse with clean water.

It should be noted that the tools used to filter the residue must be strictly disinfected to avoid bringing bacteria into the wine.
