Method 1:

Method 2:

1 Put the sliced ​​bitter gourd into a bowl, then pour in boiling water to soak it until the water covers the bitter gourd.

2 The soaking time should not be too long, about 2 minutes is enough. After soaking, rinse it several times with clean water. This method can remove the bitterness of bitter melon more thoroughly, but the disadvantage is that it will lose a lot of nutrients in the bitter melon and affect the taste.

3 Cut the bitter gourd into strips, then rinse it with cold water, gently pinching it with your hands while washing. Repeat this rinsing three or four times, and the bitter juice will be lost with the water.

4 After the bitter gourd processed in this way is fried, it tastes delicious, slightly bitter but sweet.
