In summer, the skin of evergreen bananas matures and becomes dull in color. The fruit loses a lot of weight but has a good aroma. It is suitable for ripening edible bananas. 2. Ethephon ripening method. This is a commonly used ripening method in China. Soak or spray the fruits with ethephon solution and place them in a ripening room to ripen. The concentration of ethephon should refer to the ripening temperature, time and usage. A low concentration is suitable when the temperature is high, a slightly higher concentration is suitable when the ripening time is fast, and a high concentration is suitable for coating the fruit axis or stalk. The concentration usually used for fruit dipping and spraying is 500-1000ppm. If the concentration is too high, the bananas will mature quickly and easily fall out of the comb. 3. Ethylene gas ripening method. In a closed ripening room, ethylene gas is used for ripening, and the concentration of ethylene is 200-500ppm. Ethylene can be produced by the reaction of calcium carbide (acetylene stone, calcium carbide) and water, or it can be produced by an ethylene generator using ethephon or alcohol. Using ethylene to ripen bananas, the packaged bananas can be ripened in the ripening room, saving labor. This is the method used in large ripening rooms abroad. When the concentration of ethylene in the air reaches about 3%, it is prone to explosion, so please pay attention to safety. |
