What is foreign liquor made of

6. “XXX” 3 stars, representing a brewing time of 15 years.

7.XO (abbreviation for Extremely Old) means that the brewing time is very long, generally more than 6 years.

8. "EXTRA" means the brewing time is extra long.

How to make Remy Martin XO

1. Picking:

The grapes are crushed in large wooden barrels and fermented for 5-7 days to form a raw wine with an alcohol content of about 8 degrees.

2. Secondary distillation:

The first time, the original wine together with the dregs is placed in a pear-shaped copper pot and heated. After the alcohol and part of the water evaporate, they enter the condenser and are cooled into liquid wine with an alcohol content of about 27-30 degrees. This is the so-called low-alcohol wine (Brouillis) - first distilled wine.

The second distillation lasts for 12 hours. After discarding the head and tail parts of the primary distilled wine (the first and last released steam), the winemaker separates the central components of the wine containing the most core layers and flavors, and finally forms a 72-80 degree liquor. This liquor cannot be called "Cognac" but is called "water of life" (eaux-de-vie). After being approved by the wine taster, the "water of life" can be bottled.

3. Storage and Brewing:

Remy Martin barrels are made from 150-year-old oak from the Limousin region. This wood has a rich vanilla flavor that blends very well with the brandy. Remy Martin begins to mature at 70 degrees. It needs to be lowered by about 2 to 3 degrees every year, and finally reach the legal level of 40 degrees.

4. Aging and blending:

After a period of maturation, the brandy must be blended. Blending is an art unique to the winery's masters. Each cognac is carefully curated before blending to produce a perfect aroma and taste that matches the characteristics of cognac.
