If the vegetables are refrigerated in the refrigerator (2-6 degrees Celsius), the increase of nitrite will be less than that without refrigeration. However, green leafy vegetables contain more nitrates. Even if they are kept in the refrigerator and eaten overnight, the nitrite content will exceed the standard.

Leftovers can be refrigerated for 2 days without spoiling

If you have leftover meat, fruits or vegetables, seal them with plastic wrap and store them in the refrigerator, they can be stored for two days. However, before putting the leftovers into the refrigerator, it is best to put them in a shallow bowl and wait until the leftovers have cooled to room temperature before putting them into the refrigerator. This way, the temperature of the food will be more uniform and it will not deteriorate so easily.

General leftovers can be frozen for more than 7 days without spoiling

If there is a lot of leftover food and you don't think you can finish it within two days, you can divide it into small bowls, seal them, and freeze them in the refrigerator one by one, taking out a small portion each time you eat. Avoid repeatedly taking it out to heat it up and then returning it to the freezer. When food is taken out, it will be contaminated by bacteria in the air. It is best to take only as much as you want to eat and do not put it back once you have taken it out.

Although freezing leftovers will extend their shelf life, they won't last forever. It is usually recommended to finish it within 1 week, and no more than 2 weeks. Even if the food does not spoil, the longer it is frozen, the lower its nutritional value will be.
