How to wash silverfish

How to clean whitebait

Whitebait (English: salangid), formerly known as sashimi fish, belongs to the family Silverfish of the class Pisces. It is a freshwater fish, known as the most handsome fish in Asia and the most watery fish in the world. Found in brackish and freshwater areas of East Asia, it feeds on small crustaceans. Whitebait can be eaten fresh or dried and is considered a delicacy in China.

How to clean whitebait

Here’s how:

Whitebait is also called breadfish. Due to the small size of the fish, many people do not know how to deal with it. In fact, the method is very simple: prepare a small basin of clean water, pour the fish in, then gently stir it with your hands to let the dirt settle, then use a strainer to scoop up the small fish, and rinse it three or four times in this way. Alternatively, you can pour the whitebait into a filter, turn on the faucet, not too much water, let the running water rinse slowly, after washing it clean, let it sit for a few minutes to drain the water, and then you can start cooking.

If you think it is still not clean, you can blanch the fish in boiling water after rinsing it, and then you can eat it safely.

If you find that the whitebait breaks easily when it comes into contact with water when you rinse it, it means that the fish is no longer fresh. Fresh whitebait should be dry and clean, and not sticky to your hands, so you should be careful when selecting it.

Whitebait Fried Eggs

Material:

Four eggs and 50 grams of whitebait.

practice:

(1) Wash the whitebait.

(2) Beat the eggs and add in MSG, Shaoxing wine, salt and whitebait.

(3) Take a plate, pour the cooked salad oil on it, pour in the eggs and whitebait in step 2, cover and cook on high heat for 4 minutes, stirring once during the cooking process.

Three-shredded whitebait soup

Material:

Appropriate amount of whitebait, 1 egg, 3 dried shiitake mushrooms, 1 wild rice stem, salad oil, appropriate amount of salt, appropriate amount of starch, green onions, rice wine, and sesame oil.

practice:

(1) Wash the silverfish, remove the soft and rotten ones, drain the water, add egg white, a little salt and rice wine, and mix well with your hands.

(2) Soak the mushrooms in advance and cut into strips. Cut wild rice stem into shreds. Cut the green onions into 5 cm pieces.

(3) Add cornstarch and cold water to mix well (not too thin).

(4) Heat oil in a pan, quickly stir-fry the shredded mushrooms and wild rice stems, then add water and bring to a boil.

(5) After the water in the pot boils, add the seasoned whitebait. Bring the soup to a boil again, add the seasoned cornstarch, and stir quickly with chopsticks.

(6) Add salt, sprinkle with chopped green onions and sesame oil, and serve.
