2. Cut the squid into two large pieces, cut the back side in a cross shape without cutting through, and then cut into strips about 2 cm wide;

3. Put the cut squid into boiling water and blanch it. Take it out immediately when the squid curls up.

4. Put peanut oil in the pot, add scallion, ginger and chili, add a little onion and stir-fry until fragrant;

5. After the onion is fried until transparent, add the squid, add salt and a little light soy sauce, add the coriander and stir-fry quickly for a few times before serving.

Celery Fried Squid

Ingredients: 300g celery, 150g squid, 3g cooking wine, 2g salt, 2g chicken essence, some cooking oil

1. Remove the head and tail of the squid, tear off the membrane, and cut it in half;

2. Place the squid with the inner side facing up and cut it diagonally, with a distance of about 3 mm between each cut. Do not cut it off, leaving 1-2 mm of connection, and cut it diagonally one by one;

3. Turn the squid 90 degrees and cut with a straight knife, with a spacing of about 3 mm. Do not cut it off, leaving 1-2 mm connection;

Preparation method:
