1. Cold cucumber salad

Ingredients : 300g cucumber, 100g green pepper, 100g black fungus

Seasoning : salt, MSG, soy sauce, vinegar, appropriate amount

1. Cut cucumber and green pepper into strips; soak and clean the black fungus; boil and cut preserved eggs into pieces; cut coriander and green onions into sections.

2. Take appropriate amounts of cucumbers, green peppers, fungus, coriander, shallots, cherry tomatoes, fried peanuts, red pepper rings, and preserved egg cubes and put them into a bowl. Add a little salt, MSG, light soy sauce, and vinegar, mix well, place on a plate, sprinkle with cooked sesame seeds, and serve.

2. Beer Duck

Ingredients : 3 duck legs, 1 bottle of beer, 2 slices of ginger, 5 peppers, some scallions, some light soy sauce, some soy sauce, some rock sugar, some peppercorns, some cooking wine, some cooking fume

Slice the ginger, cut the green onion into sections, and cut the dried chili into small sections.

Cut the duck legs into small pieces, add cooking wine, onion, ginger, and peppercorns into cold water, blanch them and skim off the foam.

Ingredients :

Ingredients : 1 grass carp, some celery, 100 grams of peanuts

Seasoning : half a bowl of pickled pepper, a piece of pickled ginger, a handful of dried peppercorns, some garlic, a section of green onion, some dried chili peppers, a spoonful of chopped peppers, some salt, some oil, some coriander, some chili oil, a little Guangdong low-alcohol rice wine

Production steps :

First remove the tendons of the grass carp. Make a cut on both ends of both sides and pull out both tendons completely.

Then cut a few times on both sides, first vertically and then horizontally, so that it can be more flavorful.

Add chopped pepper, salt, and Guangdong low-alcohol rice wine and marinate for half a day. Cover with plastic wrap and place in the refrigerator to marinate.

Saute chili and peppercorns

Add chopped pepper and pickled pepper and stir-fry until fragrant.

Coat the fish with the prepared seasonings thoroughly, put it in the oven, cook it at 220 degrees for half an hour, turn it over halfway through and brush it with oil. Then add the celery and peanuts and roast for a few more minutes.

4. Stir-fried chicken gizzards with three peppers

Raw materials :

300g chicken gizzards, 200g pickled peppers, some Hangzhou peppers, some fresh peppercorns, some ginger and garlic, some bean paste, some fermented black beans, some oil, a little starch

Production steps :

1. Prepare the ingredients.

2. Slice the chicken gizzards, add salt and a little starch and mix well.

3. Cut the pickled peppers and Hangzhou peppers into circles.

4. Prepare other seasonings.

5. Stir-fry the chicken gizzards and set aside.

6. Stir-fry the bean paste, fermented black beans, peppercorns, ginger and garlic until fragrant.

7. Add pickled pepper rings and stir-fry.

8. Add chicken gizzards and stir-fry.

9. Finally, add the Hangzhou pepper and stir-fry until cooked.
