Ingredients : 10 pounds of cucumbers, 1 bag of salt, 3 bags of soy sauce, half a pound of sugar, garlic, ginger, oil, pepper, white wine, MSG, etc. in appropriate amounts.

1. Wash and dry the cucumber, then cut into long strips of even size.

2. Put the cut cucumbers into a clean, oil-free and water-free bowl, sprinkle with salt, press and mix evenly, and press with heavy objects to remove as much water as possible.

3. Wash the ginger and garlic, drain the water, and slice them for later use.

4. Take out the shredded cucumbers and drain the water.

5. Pour soy sauce and sugar into a clean pot. After the sugar melts and the soy sauce is cooked dry, turn off the heat and pour into a clean container to cool for later use.

6. Add cucumber, ginger, garlic to the cooled soup in turn, mix well, add white wine and MSG.

7. Put oil in a pot and bring to a boil over high heat. Add a little peppercorns and fry until fragrant. Turn off the heat. When the oil temperature approaches room temperature, pour it into step 6.

1. The containers used during the entire process must be clean, free of water and oil.

2. There are no requirements for the size and shape of the cucumbers, but there must not be any rotten ones.

3. After washing the cucumber, be sure to dry it before cutting.

4. The amount of sugar can be increased or decreased according to personal taste. This ratio is still a bit sweet for those of us who don’t like sweets. MSG can be added or not according to personal taste, but white wine is a must to make the dish more flavorful.

5. If you like spicy food, you can add chili peppers. The sauce soup can be reused many times. After eating the cucumber, just add the cucumber in step 4 above.

6. When you take cucumbers out of the container for consumption in the future, be sure to use clean, water-free and oil-free bowls and chopsticks.
