Shaobing is a food that people are more familiar with. There are many types of Shaobing, such as normal original Shaobing, and of course fried Shaobing. Fried Shaobing tastes very good. If you can make fried sesame cakes by yourself, you should pay attention to the ingredients of the vegetarian cakes. Because ingredients are very important when making a food, so what are the ingredients for fried sesame cakes?

Raw materials

3 cups of yeast dough, 2 tablespoons of ghee, 10 tablespoons of oil, 3 egg yolks, 1 cup of white sesame seeds

Ingredients for hot noodles: 2 cups of flour, 3/4 cup of hot water, 1/2 teaspoon of salt

Ingredients for pastry: 1/4 cup oil, 3/4 cup flour

Production steps

1. Heat oven to 350F.

2. For the pastry: Heat 1/4 cup of oil and turn down the heat. Add 3/4 cup of flour and fry for about 5 minutes, until flour is peanut butter color.

3. Blanch the dough: Add 1/2 teaspoon salt to 2 cups of flour. Slowly pour 3/4 cup of boiling water into the flour, stirring with chopsticks while pouring.

When it cools down a little, knead the flour into a smooth dough. Cover with a damp towel and let it rest for 30 minutes.

4. Sprinkle flour on the workbench, put the hot dough and fermented dough together and knead them evenly.

5. Roll the dough into a thin rectangular sheet. Spread ghee evenly on top, then sprinkle with pastry.

6. Fold the left, right, top and bottom sides of the dough towards the middle by 1/3, for a total of 9 layers. Roll the dough into a thin layer.

7. Start rolling the dough from one side into a long cylinder in the shape of an old telescope and divide it into 10 portions.

8. Shaobing:

a. Spread the white sesame seeds evenly on the bottom of the plate.

b. Use chopsticks to stir the egg yolk liquid evenly.

c. Close the opening of each piece of dough with your hands. Hold the dough with both hands at the same time and knead it into a thin dough.

d. Pinch the two ends of a piece of dough with both hands and twist it in opposite directions like twisting a dough twist, while closing it in the middle to form a thick and short round tube with thin edges and a thick middle.

Flatten the dough with your hands.

e. Brush the surface of the dough with egg yolk, place the side with egg yolk on a plate and coat it with sesame seeds.

Press the surface of the dough with your hands to compact the sesame seeds.

f. Brush the other side of the dough with egg yolk and sprinkle with sesame seeds. Press the sesame seeds firmly with your hands.

g. Turn the stove to slightly higher than medium heat. Heat a pan, add a tablespoon of oil and fry the dough on both sides until golden brown.

9.Put the pancakes in the oven and bake for 15 minutes on each side.

The characteristics of fried sesame cakes are: crispy texture, no collapse after cooling, and no hardness.

The characteristics of Pansi Wuxiang are: bright red color, crispy outside, soft inside, and layered appearance.

Craft Tips

When making it, sprinkle some pepper, salt, fennel seeds and other seasonings on the hydrated noodles and oily noodles.

Then stack the layers and roll them into tea bowl-sized cakes, put them into a special hanging oven and bake them over low heat. The upper and lower fire should be even, the temperature of the bottom of the pot should be appropriate, and the cakes should be turned over while being brushed with oil. The baking time must also be strictly controlled. After taking it out of the pot, place it on an iron rack to let it char, then it is ready to eat.
