What to eat to detoxify bean poisoning?

Green beans, also known as cowpeas, can be eaten in many ways. They are rich in nutrients and many people like to eat them, but there are also many clinical cases of poisoning from eating green beans. This situation may be caused by the beans not being fully cooked. So what can you eat to detoxify after being poisoned by beans?

1. The main cause of poisoning from eating beans is that they are not cooked thoroughly, which causes poisoning after eating. If the food is blanched in water and then made into cold dishes or stir-fried, the toxic components it contains cannot be completely destroyed. Generally, poisoning rarely occurs when the food is stewed. Green beans are best stewed. When stir-frying, don't be too greedy for crispness. They should be fully heated to make them thoroughly cooked.

2. Bean poisoning usually does not require treatment and will heal quickly after vomiting and diarrhea. Severe vomiting and diarrhea can be treated symptomatically, and those with coagulation phenomena can be given low molecular weight dextran, heparin, etc. It is really serious and I recommend going to the hospital for treatment.

3. Folk prescriptions use licorice and mung beans to make tea, which has a certain detoxification effect. For mild poisoning, just lie down and rest, drink sugar water or strong tea in small amounts and multiple times, and take sedatives such as diazepam and chlordiazepoxide when necessary.

4. For patients with severe poisoning, if vomiting continues, causing dehydration, or hemolysis, they should be sent to hospital for treatment in time. The incubation period of poisoning caused by ingestion of uncooked green beans is several 10 minutes, generally not more than 5 hours, mainly gastroenteritis symptoms such as nausea, vomiting, abdominal pain and diarrhea. Vomiting can be as few as a few times, or as many as dozens of times. There are also dizziness, headache, chest tightness, cold sweats, panic, and a burning sensation in the stomach. Most patients have increased white blood cells, and their body temperature is generally normal. The course of the disease is generally several hours or 1 to 2 days.

5. To prevent poisoning, lentils should be processed before eating. They can be blanched in boiling water or stir-fried in hot oil until they change color and are cooked through. Only then can they be safely eaten. The toxic components of beans are mainly saponins and trypsin inhibitors. When cooking, the beans should be cooked first, then removed from the pot and simmered with seasonings to detoxify.
