Although freezing peaches can reduce the speed of microbial invasion, the metabolism of the peaches themselves will consume the nutrients inside the peaches, resulting in a large loss of nutrients in the peaches, and the taste will become very poor. So peaches should not be stored in the refrigerator. In a dry refrigerator, the sweetness of peaches will continue to evaporate, so peaches should be stored at room temperature.

Peaches can be stored for 6 weeks in a controlled atmosphere environment with a temperature of 0℃, a relative humidity of 85%-90%, a carbon dioxide volume fraction of 5%, and an oxygen volume fraction of less than 1%, which is 1 times longer than the storage period of peaches refrigerated in air. If bricks or zeolites soaked in potassium permanganate are added to the controlled atmosphere bag to absorb ethylene, the effect will be better. It is reported that spontaneous controlled atmosphere storage using fresh-keeping bags and CT series controlled atmosphere preservatives can keep food fresh for 2 months at 0℃-2℃, and for at least 8-10 days at 25℃-30℃.

How to store peaches:

Peaches should be stored at room temperature. The sweetness of peaches does not come from fructose, so unlike other fruits, the sweetness becomes stronger as they are frozen. Instead, peaches will produce more sucrose at around 30℃. The sour taste will also increase with temperature, so storing it at 15℃~20℃ can suppress the sour taste, but fructose will still take effect and it will have the taste of sucrose, so the most appropriate method is to place it in ice water for 10-20 minutes.
