What is the difference between dried shrimp and shrimp

Some friends have some misunderstandings about shrimp skin and dried shrimp, and think that dried shrimp is shrimp skin. In fact, dried shrimps are smaller in shape than dried shrimps, because dried shrimps are made from cooked and dried hair shrimps in the ocean, while dried shrimps are made from shrimps.

1. The difference between dried shrimp, dried shrimp, shrimp meat and dried shrimp:

Shrimp: All shrimp grown in waters, boiled, dried, and peeled.

Shrimp: The peeled and head-less part of fresh shrimp grown in all waters.

Dried shrimp: specifically refers to the part of shrimp grown in seawater that is cooked, dried, peeled and has its head removed.

Shrimp skin: Made from shrimps grown in the ocean, cooked and dried.

Second, the selection method of dried shrimps:

The quality requirements for dried shrimp are that they are large and uniform, with a firm and plump body, complete head and tail, white or slightly yellow in color, shiny, light in salinity, free of shrimp bran, free of impurities, and feel dry and not sticky. Shrimp skin is usually divided into three grades. Grade-one dried shrimps should be over 2 cm long, large and neatly sliced, lightly salted, yellow-white in color, dry, delicious, free of impurities, and no more than 10% of them should be without a complete head or tail. The body length of the second-level shrimp skin is less than 2 cm. Overall, the shrimp skin is not very neat (the ones with incomplete head and tail should not exceed 25%), without impurities, slightly darker in color, and slightly heavier in salt. Grade three shrimp skin, overall, the shrimp pieces are uneven in length (more than 25% have incomplete heads and tails), are mostly broken, have impurities, and feel damp to the touch.

Shrimp skin can be divided into two types: raw sun-dried shrimp skin and cooked sun-dried shrimp skin. The former is salt-free, lightly sun-dried, highly fresh and not prone to moisture or mildew. The latter is boiled with salt, drained and dried, and still retains its fresh flavor. When storing, the two types of dried shrimps cannot be mixed. Storing them separately can preserve their original flavor.
