Methods for rapid detection of food poisoning

1. Salmonella is one of the main pathogens that cause food poisoning and is also the most common cause of food poisoning. It is usually isolated from the patient's feces or vomitus. Food poisoning caused by Staphylococcus aureus: It is mainly diagnosed by detecting enterotoxins in food or feces, because Staphylococci have been killed after contaminated food is heated, and a negative result will be obtained if cultured. Enterotoxins are not destroyed when heated. Therefore, the detection of enterotoxins can be assisted by animal experiments or enzyme-linked immunosorbent assays.

Food poisoning caused by Vibrio parahaemolyticus: It is mainly caused by ingestion of seafood and pickled vegetables contaminated by Vibrio parahaemolyticus. Food poisoning caused by this bacterium is mainly diagnosed by bacteriological testing, but in stool culture, most cases turn negative on the second day, and only a few can be detected positive within 2 to 4 days. Therefore, stool culture should be collected in time for suspected cases to avoid affecting the positive detection rate.

3. Food poisoning caused by Campylobacter jejuni is caused by ingestion of meat or milk contaminated with Campylobacter. The diagnosis of the disease is mainly based on bacteriological testing. Food poisoning caused by Yersinia enterocolitica: Collect a sample of food or stool for culture.

4. Food poisoning caused by Clostridium botulinum: It is mainly caused by the exotoxin produced by Clostridium botulinum. Suspicious food should usually be collected on site for bacteriological testing or animal testing. Infant botulism is mainly diagnosed by testing for fecal endotoxins, and fecal culture results are usually negative.
