Shiitake mushrooms cannot be eaten after they become moldy! Do not eat anything that is moldy. Some people see that only the surface of the food is moldy and think that they can eat it after scraping or cutting off the moldy part. In fact, the "toxins" of the mold have already penetrated into the inside of the food, and moldy food is a carcinogen. In the summer, shiitake mushrooms will become damp and become moldy, making them inedible and causing poisoning. To avoid this, heat the shiitake mushrooms in a microwave beforehand and the moisture will evaporate quickly. After cooling, put the mushrooms in a plastic bag and squeeze out the air in the bag. Because there is moisture in the air, it will corrode the mushrooms and cause them to mold.

The molds in moldy food can produce toxins. These mycotoxins, such as aflatoxin and ochratoxin, have strong carcinogenic effects. Moreover, different mycotoxins have different toxic effects. Some can cause damage to the liver and kidneys, some can cause symptoms of the nervous system, and some can cause skin inflammation. Take aflatoxin, which is quite common in our lives. Experiments have shown that aflatoxin’s ability to cause liver cancer is dozens of times stronger than the carcinogen dimethylnitrosamine. Doesn’t it sound scary? Among food, peanut products are more likely to be contaminated by this toxin, such as peanuts, peanut oil, peanut butter, etc., followed by rice and corn.
