Health benefits of vinegar

Vinegar, also known as bitter wine, is not only a commonly used cooking condiment, but also a commonly used Chinese medicine. In recent years, people have paid more and more attention to the medical and health care functions of vinegar. There are ten rules for longevity among the Japanese people, among which "less salt and more vinegar" is listed as the second one. Some people have summarized that vinegar has four major health benefits: one is to lower blood pressure and prevent arteriosclerosis; two is to kill bacteria; three is to prevent and eliminate fatigue; four is to moisturize the skin.

Rice vinegar contains more than 20 kinds of amino acids and 16 kinds of organic acids, which can promote sugar metabolism, eliminate fatigue, lower cholesterol and prevent arteriosclerosis. Experiments have shown that general bacteria will die if soaked in vinegar for 10 minutes. Soaking tableware in vinegar for 130 minutes can kill bacteria that cause food poisoning. A vinegar-water solution can wash away residual pesticides and radioactive dust on vegetables and fruits. The test results show that vinegar can protect the vitamins contained in vegetables from alkaline media and oxidative damage.
