When pork becomes smelly, it will lead to serious microbial contamination, and the protein and other nutrients in the pork have been lost. There is no nutritional value in eating pork, so we must pay attention to the freshness of the pork when buying it.

The reason why pork smells bad is that proteins and other substances are decomposed, and bacteria multiply, making the meat sticky and green, and producing smelly substances such as putrescine, cadaverine, hydrogen sulfide, and skatole. Stinky pork should be thrown away because it is seriously contaminated with microorganisms, which increases the chances of the presence of pathogenic and toxin-producing bacteria, and allows some bacteria with weak pathogenicity to grow and multiply in large numbers, leading to foodborne diseases after being consumed by humans. In addition, toxins will be produced during the process of decay and deterioration, such as botulinum toxin, which will damage the human nerves and cause muscle stiffness and paralysis.

If it is a normal fishy smell that comes with pork itself, you can use the following method to remove the smell

1) Wash the meat repeatedly with salt water and clean water to remove the odor on the surface of the meat;

2) After boiling the water with fennel and star anise, pour in the diced meat and take it out when the water boils again. At this time, most of the odor should be gone;

3) Cut the meat into the size for cooking, preferably shreds or thin slices, add ginger, garlic, and onions, add oil over high heat, add ginger, garlic, and onions, stir-fry the shredded or sliced ​​meat), add cooking wine, preferably 60% alcohol white wine, which can also remove the stinky smell.

Storage of pork

It is best to buy pork in small quantities and multiple times to prevent it from losing its flavor and becoming contaminated by bacteria and spoiling during storage. Usually the meat is cut into pieces and then spread flat in a metal basin and frozen in the freezer. The frozen meat is then wrapped with plastic film and stored in the freezer. It can be kept for 1 month without deterioration. Take it out when you need it and thaw the meat at room temperature before processing.
