People who often eat pickles are more likely to develop esophageal cancer

Pickles contain a lot of nitrites. If the body absorbs too much nitrite, it will affect the function of red blood cells, making the blood unable to transport oxygen. The lips and fingertips will turn blue. In severe cases, it will cause brain hypoxia and even death. Nitrite itself is not carcinogenic, but under cooking or other conditions, the nitrite in pickles can react with amino acids to form nitrosamines, which are highly carcinogenic.

Eating hot food frequently may increase the risk of esophageal cancer

Overheated tea and porridge can easily damage the esophageal epithelial tissue, which can cause chronic inflammation or ulcers over time. After healing, esophageal scar stenosis may form. Long-term esophagitis can easily lead to the malignant transformation of mucosal epithelial cells and develop into esophageal cancer. The human esophageal wall is composed of mucosa, which is very delicate and can only tolerate food at 50-60℃. If the temperature exceeds this, the esophageal mucosa will be burned. Frequent consumption of hot food can cause damage to the oral cavity, esophagus, and gastric mucosa. If the mucosal damage has not been repaired and is burned again, superficial ulcers may form, leading to chronic oral mucosal inflammation, oral mucosal leukoplakia, esophagitis, atrophic gastritis and other diseases. Repeated burns and repairs will cause changes in the quality of the mucosa and even cancer.
