How to make fried meatballs? This is a delicious dish that you can make at home. A little trick to making meatballs is to add breadcrumbs or steamed bread crumbs to the meat filling, and then add various seasonings and aniseed, such as chopped green onion, chopped ginger, etc., adjust it to your favorite taste and then start frying.

1. Prepare the meat

Wash the whole large piece of pork and prepare it. The amount of meat depends on how much you want to cook and you can control it yourself.

2. Prepare steamed bread crumbs

Prepare 2 steamed buns (if there is a lot of meat, you can increase the amount depending on the situation), let them dry overnight, knead them into a shape similar to bread crumbs and set aside.

3. Chop the meat

Start chopping the meat filling. Since you will be chopping it into dumpling filling during the Chinese New Year, you can chop more. Use some for making dumplings and some for frying meatballs. It is recommended to slice the whole piece of meat before chopping it, which can save some effort. Or you can choose to take it to a special meat grinder stall in the vegetable market and have it ground by a machine.

4. Start making the filling

Prepare a large bowl for mixing the stuffing, put the chopped meat stuffing and the kneaded steamed bun crumbs in the bowl, chop some green onion, minced garlic, and minced ginger, mix them into juice and pour it in, then add appropriate amount of starch, an egg, and other ingredients, such as water chestnuts, lotus roots, etc. (crushed). Let the meat filling be fully blended with steamed buns, water chestnuts and other ingredients. You can use your hands to toss the meatballs repeatedly so that the steamed buns and water chestnuts in the meat filling can be quickly and evenly integrated into the meatballs, making them less likely to crack when frying.

You can add starch when making meatballs, but you don’t have to add it and can use white flour instead. The appropriate amount to put in depends on your preference. You may like more meat and less flour. If you like more noodles, add more. There is no fixed number, but it must form a clumping mass when stirred.

Add bread crumbs to the prepared meatball filling to increase the adhesion and prevent it from falling apart. The fried meatballs will be crispy and extra soft on the inside, tender but not leaking. Whether you eat them directly after frying, steam them, or stew them, the taste will be much better. Otherwise the meatballs will be very loose if fried directly. Of course, if conditions permit, fish is better than steamed buns.

5. Add seasoning and stuffing

While stirring, add appropriate amounts of salt, sugar, cooking wine, pepper, oyster sauce and other seasonings to improve the taste. You can add specific seasonings according to your preference. Remember not to add soy sauce, otherwise it will become dumpling filling.

6. Make meatballs

Wash your hands, grab an appropriate amount of the prepared meatball filling, and knead it in your hands to form the meatballs. The size of the meatballs is up to you. You can fry some big meatballs and use them to make four-happiness meatballs and braised lion head. Other small and medium-sized ones can be used for braising or steaming, such as making fried meatballs, fried meatballs, sweet and sour meatballs, meatballs and cabbage meatball soup, etc. It's just the size and the temperature during the frying process that are different. When kneading, the surface of the meatballs should be smooth and not easy to fall apart when put into the oil pan. The consistency should be such that it can be easily rolled into balls with hands. If it feels too dry, add a little more egg liquid. If it is too wet, add a little flour.

7. Start frying

Turn on high heat in the oil pan and wait until the oil temperature is hot and steam can be seen on the surface, indicating that the temperature has been reached. Put it into the oil pan and start frying. When frying, it is best to use a small pan so that less oil is used, and the oil only needs to cover the height of the meatballs. First use 70% hot oil to shape the meatballs, then control the oil temperature to 60% hot over low heat and fry the meatballs thoroughly. Repeat the process, putting the kneaded meatballs into the oil pan one by one. But remember to stir with long chopsticks to avoid sticking to the bottom.

8. Fry until golden brown

When the meatballs are fried until golden brown, use a spoon to scoop them out and set them aside to cool. The crispy outside and tender inside, with golden color, is really appetizing.

9. Let it cool and put it in the refrigerator

After it cools down to room temperature, you can put it in the refrigerator and eat it anytime. Process it when you eat it. You can braise or steam it.
